Dhal Curry Spice Pack

Ingredients

1 cup red lentils (masoor dhal)
-
2 cups water
-
½ tsp Ceylon turmeric powder
-
½ tsp Ceylon curry powder
-
Chilli (optional, if needed):
-
½–1 tsp chilli powder or
-
1–2 dried red chillies or
-
1 fresh green chilli, sliced
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
½ tsp Ceylon black pepper (crushed or ground)
-
1 sprig curry leaves (or ½ tsp curry leaf powder)
-
1 small Ceylon cinnamon stick
-
½ cup coconut milk
-
1 tbsp coconut oil
-
Salt to taste
Instructions

Cook the lentils
Rinse lentils until water runs clear.
Add lentils, water, turmeric, and salt to a pot.
Bring to a gentle boil and simmer 10–15 minutes until soft. -
Prepare the tempering
Heat coconut oil in a pan over medium heat.
Sauté onions until golden.
Add garlic and sauté until fragrant. -
Add cooked dhal
Drain off most of the excess water from the dhal.
Add the cooked dhal to the pan and mix well. -
Season the dhal
Add curry powder, black pepper, curry leaves, and break the cinnamon stick into the dhal.
Add chilli only if needed.( as chilli is not in the pack take it link the chili page here )
Cook for 3–5 minutes, stirring gently. -
Finish with coconut milk
Lower heat and add coconut milk.
Simmer for 2–3 minutes (do not boil).
Adjust salt if needed. -
Serve
Serve hot with rice, roti, string hoppers, or bread.
